Hildegard’s nerve cookies


225 g butter

1½ dl brown sugar

1-2 eggs

5-5½ dl Birkkala Wholemeal Spelt Flour

2 tsp baking powder

½ tsp vanilla sugar

½ tsp cinnamon

½ tsp nutmeg

1/4 tsp clove

1½ dl almond powder

For greasing: eggs

Onto the surface: almond flakes


Whisk the butter and sugar to froth. Add the eggs one by one while whisking. Add the flour to which the remaining ingredients are mixed. Knead the dough into shapes of bars. Wrap the bars in cling film and let them harden overnight. Cut the bars into approx. 1 cm thick slices and place them onto a baking tray covered with a baking sheet. Lightly glaze the slices with eggs and sprinkle almond flakes on top of them.
