Chocolate Chili Spelt Cookies


100 grams butter

100 grams dark chocolate

200 ml brown sugar

150 ml sugar

2 tsp vanilla powder/1 tsp vanilla extract

2 eggs

200–250 ml Birkkala Wholemeal Spelt Flour

100 ml cocoa powder

1 tsp salt

1 tsp cinnamon

1 tsp chili powder

¼ tsp cayenne pepper powder

½ tsp baking soda

100 g chocolate chips


Heat the oven to 160 °C/320 °F.

Melt the butter and chocolate together. Let the mixturecool.

Whisk sugars, vanilla and eggs lightly.

Combine the mixtures. Add the flour, cocoa, spices andbaking soda. Mix well. Add chocolate chips into the batter.

Measure 1 to 2 teaspoonfuls of batter for each cookie. Leavespace between the cookies because the batter spreads in the oven. Bake on themiddle level in the oven for 14 minutes. After 7 minutes turn the pan for notto burn the edges of the cookies.
