150 grams butter
200 ml sugar
2 tsp vanilla powder or 1 tsp vanilla extract
150 ml Birkkala White Spelt Flour
75 ml cocoa powder (dark)
1 tsp baking powder
Heat the oven to 200 °C/392 °F. Grease a (springform) cakepan (Ø24 cm).
Melt the butter in a sauce pan or in a bowl in microwaveoven. Let the butter cool slightly, then add sugar and eggs and mix well. Ifyou use liquid vanilla extract, add it to the mixture.
Mix together flour, cocoa and baking powder in a bowl. Ifyou use vanilla powder, mix it with the flour. Pour the flour mixture to thebutter mixture and mix until smooth.
Pour the batter into the cake pan. Set the pan on the lowestlevel in the oven and bake for about 15 to 20 minutes. The cake should be ”muddy”in the middle.
Let the cake cool (in a refridgerator) before removing itfrom the cake pan.
Birkkala Spelt Mudcake is a delicious dessert with whippedcream or with ice cream.
