100 grams butter
300 ml unflavored yogurt
50 ml honey
50 ml brown sugar
700 ml Birkkala Wholemeal Spelt Flakes
2 tsp baking powder
½ tsp cinnamon
100 grams/160 ml (blue)berries
Heat the oven to 175 °C/347 °F.
Melt the butter. Mix it with yogurt, honey, sugar and eggs.Add the spelt flakes, baking powder and cinnamon.
Peel the banana and chop it into small cubes. Add them intothe batter and mix airily until smooth. Do not knead.
Share the batter into cupcake liners or forms. Sprinkle theberries over the muffins and press them lightly into the batter. Finish thesurface with a pinch of spelt flakes. Set the muffins on the middle level inthe oven and bake for about 30 minutes.
Let the muffins cool before serving.
