Spelt flour can be used for cooking and baking in the same way as wheat flour. When baking, the viscosity of spelt flour is slightly different from wheat flour, so it’s worth using a recipe tested with spelt flour if you want to use only spelt flour. The spelt recipes of Birkkala Farm have been tested with Birkkala spelt flour. Use our spelt flour to get the best results.
It is best to leave the spelt dough slightly thinner than regular wheat dough. The baking temperature for spelt bakeries is slightly lower than that of wheat, and accordingly, the cooking times are slightly longer.
Recipes for Birkkala Pearled Spelt can be found eg. on the Food & desserts page. You can also use Pearled Spelt in many of our recipes instead of Birkkala Spelt Flakes. Remember to shorten the cooking time to about 20 minutes.
